Kale Hipster Salad Recipe

I can’t believe that it has been so long since I last posted….did anyone miss me?
So, before we get to the Kale Salad, a bit about my summer. Apart from sailing around the world three times, I’ve been busy diving for oysters in Japan, grinding coffee beans in Costa Rica, seeking the finest tea leaves from Sri Lanka and slaughtering my own organic pigs fed on a diet of barley and acorns. Oh, and I nearly forgot: I was in London at the 2012 games, representing Great Britain in the Modern Pentathlon AND the USA at beach volleyball. You may also have seen me as a nurse in the opening ceremony and one of the London Cabbies chauffeuring the Spice Girls in the closing ceremony. (Baby Spice if you must know).
Of course, the truth is far more mundane but no less involving, which is a polite way of saying I’ve been busy trying to keep The Ladies™ busy during this ludicrously long summer vacation. Thirteen bloody weeks with no school. Yes. Really. Thirteen: a baker’s dozen of weeks with two five-year olds. And that is the reason why I can but dream of pursuing a life of gourmand leisure and why I’ve written very little.
So back to food, on a recent grown-up trip to the High Line, NYC (I managed to escape without The Ladies™) I felt hip as I discovered the incredibly easy, Northern Spy‘s Kale Salad. It is so good I had to write about it in my Barista Kids What’s for Dinner? post, you can read about it here.
Aside from writing for Barista Kids, I’ve been doing a lot of grilling lately as my oven has just stopped working. So if any lovely appliance manufacturers want to offer me a discount I promise to write gushing words about your wonderful appliances. If you’re wondering how I made this epic salad without my oven – easy. I toasted the almonds and roasted the carrots on my grill. Next challenge will be baking cakes on the grill, could this be a new Olympic sport?

Hi Lil, Lol and I were in a Spanish restaurant this evening, and had some goat’s cheese with a marmalade/orange zest and chilli topping that was out of this world.
