A month of birthdays – Toasted Coconut Cake

May is a big birthday month in our house.

As well as my mum, my mother-in-law, my best friend and my aunt, King Marv had his birthday twice. He was working long hours on the big day so he had another one the following day so that The Ladies™ could celebrate. They were adamant I made a guitar cake. That was not in my plans – too time consuming and last time I attempted to make a guitar birthday cake – May 2009 – it looked like The Ladies™ had decorated it.

Instead I printed out his favorite guitar – a Gretsch White Falcon – made it into a topper and got to work on Ina Garten’s coconut cake recipe. This wonderful cake is improved only by toasting the coconut flakes.

Sorry my dear Bootcamp friends, I had better warn you as May is This Little Piggy’s International Month of Birthdays there are more cake posts to follow. As I served with raspberries it counts as healthy.
