Tomato Fest Part 2

I can’t believe a week has gone by since my neighbor, Rosa, had her marathon tomato sauce session. I intended to post this sooner but one angry Irene got in the way.

So where did we leave off? Ah yes, day one finished – 41 bushels cleaned and sorted and blanched.

Day two was about separating the seeds and the skins, then simmering the remaining sauce with salt to then be bottled as gravy.

In two days the entire operation was finished. 41 bushels of tomatoes canned and everything all cleaned up. Those ladies work fast and efficiently, as you can see in the photo below. It is beyond me how they manage to calculate how many mason jars and lids to use. The Little Ladies™ were fascinated with the whole process.

I look forward to sharing some recipes using this as a base very soon. Arrivederchi until next summer.
