Happy Mother’s Day! – Pancake recipe

Happy Mother’s Day. How was yours? I’m happy as long as I have a cup of good coffee. The best breakfasts can be let down by mediocre coffee. I can skip the eggs, granola and bagels for coffee. Just give me good coffee.
This year I had almond croissants and coffee in bed served on a tray with a fresh azalea plucked fresh from the yard. And it was perfect as the coffee was good.
So what is good coffee? My morning latte has to be made on the stove top in my Bialetti espresso maker. Forget those overpriced capsule coffee makers that just clutter up your counter. Yes they make good coffee but do you really need more gadgets? Weak drip coffee does not cut if for me either. And please don’t even mention instant coffee, it really does leave a bad taste in my mouth.
So the Bialetti goes on the stove. Then the milk gets heated and frothed in one of those stove top frothers. Four minutes is all it takes while your kitchen fills with a delicious smell.
My everyday coffee is espresso ground Lavazza. My splurge is Illy. If you blanche at the cost of Illy $14.99 a can then just remember it is still works out cheaper than buying out at your local coffee shop or Starbucks.
King Marv brought these beans back from Seattle. I need to track them down as the flavor was so good. I’ve not found here on the East Coast yet so let me know if you ever see them.
