Last week was such a busy week. The Ladies™ had no camp and as much as I love being with them, entertaining four-year olds is hard work. I have an inordinate amount of respect for preschool teachers. We also had a day trip to the Poconos (now that’s a word I just love saying), an International Pot Luck that I hosted and on Saturday the Whole Foods Healthy Eating Cook-Off on Park Avenue, more to follow on NY Summer Streets fun later.
So the dinner criteria for most of the week was quick and healthy. Yes I know these nuggest are fried, but fried food in moderation is not the enemy, trust me. If you use canola or sunflower oil it’s not unhealthy.

Surprisingly for “kids’ food” they tastes remarkably good – Japanese panko bread crumbs, Parmesan, good quality, organic chicken – what is not to love? For grown ups they go really well with a big green salad with honey mustard dressing.
