It has been too hot the past few days to think about food, actually that’s not true, I ALWAYS think about food. The temperature may have dropped to a comfortable 90° but that’s still pretty hot. The recipe for this refreshing tomato and cucumber salad is here over on Barista Kids, as well as instructions on how to cook a whole chicken outside on the grill.
I made the salad last week in the midst of the inferno. Six of us cooked up a storm at my friend chef Nicky Sandel’s Middle Eastern and Mediterranean cooking evening, part of her International Cooking Workshop series.
We learned how to roll dolmades (stuffed vine leaves). We made kookoo sabzi -a vegetable souffle/ pancake with lots of herbs, it tasted like something out of Yotam Ottolenghi’s book, Plenty. We grilled swordfish and chicken kabobs. For dessert we made chocolate shortbread with pistachios.
All this was washed down with an incredibly refreshing cocktail Pink Panther – pineapple juice, vodka, amaretto and grenadine. I would never order a drink like this. For one, it is pink and often sports a paper umbrella and maraschino cherry. But all rational thought had melted and it went down very well. It is one of Greece’s most popular cocktails, maybe that has something to do with their economy.
